Chicken Curry Isolation Sticks – recipe

You guys said you wanted a tasty chicken recipe to try while you’re locked up in isolation. I recommend you give this one a try if you can. It’s a bit more involved than making Craft Dinner for the 420th time since being locked up, but it’s well worth it. The entire family loves this one; yes that includes the kids.

This recipe is Indian inspired and the original recipe from which I tweaked and created this one comes from great Greta Podleski. Before we begin you will need to have some time to marinate the chicken. You could do it the night before or at least a few hours before cooking. There is also a separate sauce you can make with this. So long as you are not in a rush it is not overly complicated. Besides, what were you gonna do anyways with your spare time…. actually don’t answer that.

There are two recipe parts to this – the Marinade and the sauce

MARINADE:

  • 1/4 cup olive oil
  • 1 lemon
  • 1 tbsp honey
  • 1/2 tbsp ginger powder
  • 1 tbsp curry powder
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tbsp minced garlic
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp ground cinnamon
  • dozen or so chicken drumsticks (or thighs if you prefer) with the skin on or off (I prefer off – but more work)

SAUCE:

  • 1 cucumber (not the one you just used for pleasuring yourself ffs)
  • 1 cup of Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp cumin
  • 1/4 tsp black pepper

Step 1 – mix all marinade ingredients. Stick your chicken in the sauce and coat it well. Let it marinate for at least a few hours.

For the lemon we want the skin grated and the juices squeezed from it.

Step 2 – Preheat oven to 375 F

Step 3 – Sauce: Peel your cucumber, shred it, and pat it down with a towel to absorb the water in it.

Step 4 – mix reaming sauce ingredients and set aside in the fridge

Step 5 – place drumsticks on a rimmed baking sheet and drizzle the extra sauce over it – let cook for 45 minutes. Set to Broil and blast it for an additional 1 minute.

Step 6 – Enjoy your chicken served in the dipping sauce with whatever additional sides you chose to have with it. In my example you will see some coconut rice – you do you.

Pro tip: While you wait for this to marinate you could always make the bitch some treats.
